Date Fruit

Date fruit (Phoenix dactylifera L.) has always occupied an important place in the diets of people in the Middle East. In spite of the enormous socioeconomic transformation that has taken place in this part of the world, date fruit continues to form an essential component of the daily diet.

Unlike many other fruits, dates can be consumed or used for human consumption in every stage of fruit development.

 

Date fruit is usually classified into four main maturity stages:

Kimri, Khalal, Rutab, and Tamer.

Kimri stage fruit is young, green in color with hard texture, thus can be used for the preparation of pickles and chutney. Depending on the cultivar, the date fruit changes its green color during the next stage.

The Khalal (or Bisr) stage date fruit attains maximum size and weight; develops a typical yellow, purplish-pink, red, or yellow-scarlet color but retains a firm texture and is largely consumed raw as fresh fruit or can be used for jam, butter, or date syrup.

During the Rutab stage, half of the fruit becomes soft, less astringent, and sweeter but darkens in color and can be used for jam, butter, date bars, and date paste. Rutab stage fruits of a few cultivars are being popularly consumed as fresh.

During the final or ripe stage, Tamer, the whole fruit attains maximum total solids, highest sweetness and lowest astringency with a dark brown or black color.

MAZAFATI DATE

Mazafati or Mozafati (also called the Bam date or Kimia date) is a dark, soft, fleshy and sweet date about 2.5-4.5cm in size with a moisture content of 15–35%. The date is suited for fresh consumption. At a temperature of −5 °C it can be kept for up to 2 years and at 0-5°C for up to 12 months. Mazafati date harvest starts in August.

RABBI DATE

Rabbi is a semi-dry date about 3-5cm in size with a moisture content of under 15%. Rabbi date can be kept in room temperature for 12 to 18 months. Rabbi date harvest starts at the end of August.

KABKAB DATE

Kabkab is a wet date about 3.5-4 cm in size with a moisture content of 18%. As a wet date Kabkab can be kept in room temperature for 6 months and up to 12 months in 0-5°C. Kabkab is usually harvested in mid September.

SHAHANI DATE

Shahani (Shauni) is a semi-dry date about 3-4.5 cm in size with a moisture content of around 15 -18%. As a semi-dry date Shahani can be kept in room temperature for 12 months. Shahani is usually harvested in late September.

ZAHEDI DATE

Zahedi (Ghasb) is a dry date about 2.5-3.5cm in size with a moisture content of under 14%. Zahedi can be kept in room temperature for 18 months and harvesting time is in mid September.

PIAROM DATE

Piarom (Maryami) is a semi-dry date, about 3-5cm in size with a moisture content of under 15%. As a semi-dry date Piarom can be kept in room temperature for 18 months and is usually harvested in mid September.

KALOUTEH DATE

Kalouteh (Kaliteh, Kali) is a semi-dry date about 2-4cm in size with a moisture content of 13-23% which looks very much like Mazafati date. At a temperature of −5 °C it can be kept for up to 2 years and at 0-5°C for up to 12 months. Kalouteh date harvest starts at the end of August.

DATE SYRUP

Date syrup is sweet-tasting syrup derived from the date fruit. Its sugars offer a better natural alternative to other types of sweeteners.
